I’m looking for something a bit darker than the default theme. How do I switch to a different one? Or better yet, how do I customize the default?

You can use any of the AdminLTE skins: https://adminlte.io/themes/AdminLTE/documentation/index.html#layout

Can be changed in your sprinkle by overwriting this config: https://github.com/userfrosting/UserFrosting/blob/master/app/sprinkles/core/config/default.php#L123
